Air is what turns a walnut rancid. This takes the air out.
Walnut fat oxidises on contact with oxygen: that is why a kernel shelled in January tastes of cardboard by March. Vacuum-packed it lasts many months longer. The same goes for peeled chestnuts headed for the freezer, for dehydrated figs, and for closing half a bag of chestnut flour before it takes on damp. Double seal, bags up to 28 cm wide, and a gentle setting for anything that crushes.

How to store it
Always unplug it before cleaning, and never put the body of the machine in water. Trays and removable parts: warm water and mild soap, dried completely before reassembling. Store it dry. You have three years of statutory guarantee from delivery; keep the invoice, which is what proves it.
