Make them last the whole season
- Fridge, not pantry
- In the vegetable drawer they keep two to three weeks. At room temperature, barely one.
- Paper or mesh, never plastic
- Chestnuts breathe. In a sealed bag they sweat, and where there is moisture, mould follows.
- The water test
- If one floats, discard it: it is hollow or wormy. The ones that sink are perfect.
- Freezer for the winter
- Peel them raw or roasted and freeze them. That way you have chestnuts until April.
- Dried chestnuts: twelve hours soaking
- Rehydrate them the night before and simmer for 40 minutes with a splash of anise.
