The onion from Fuentes de Ebro barely bites: shred it and eat it raw in a salad without anybody at the table weeping. White, flattened, thick juicy layers, from the market gardens along the Ebro in Zaragoza. We do not grow it and we are not going to: this onion does not happen in Galicia, and the one that does happen here is sharp.

How to store it
Picked and shipped unwashed: the soil is what protects it. Wash it just before cooking, never before storing. Leaves go in the fridge drawer in a paper bag or wrapped in a damp cloth, and keep 3 to 5 days. Potatoes and onions are the opposite: out of the fridge, somewhere cool, dry and dark — and never together, because onions make potatoes sprout.
